Here’s a little recipe for your Monday…
Strawberry Blender Muffins!
If you’re a mama of littles and haven’t discovered the “blender muffin” prepare to get excited. They could not be easier, just toss the ingredients into a blender or food processor, blend, scoop and go. The recipe is easily modified to taste or for food sensitivities.
It has been the joy of my life that Hugo is an amazing eater (so far!). I’m such a foodie that it makes my heart happy to see him willing to eat anything I offer, he will follow me into the kitchen going “mmmm! mmm!”. The last few weeks as he’s been been eating more and more, I realized I need to be more intentional about packing some actual nutrition into his little meals, not just throwing him popcorn and cheerios when he’s fussy.
I hope your Monday is off to a good start. I just got home from my favorite barbell class at the gym, moving a little slow and feeling weak thanks to a strange virus that ended me in the ER last Wednesday. But it felt productive to get back into my routine. Hugo, of course, fell asleep on the drive home, so I took advantage of the early nap time and baked up these treats. | Strawberry Blender Muffins | makes 10
1 1/2 cup Gluten Free Oats
1 Banana
1 Egg
1/2 cup Plain Greek Yogurt
1 tablespoon Coconut Oil
1/2 teaspoon Vanilla Extract
1 teaspoon Baking Powder
a dash Salt
a dash Cinnamon
3 to 5 Fresh Strawberries
Pre-heat oven to 350. Line muffin tin with 10 paper liners and spritz with cooking spray. Blend first 9 ingredients in a blender or food processor until smooth, scoop into muffin tin. Wash and dice strawberries placing several on top of each muffin. Bake for 18 minutes. Cool and enjoy!
Notes: This recipe is loosely based off of this recipe and this recipe. I chose not to add any other sweetness than banana, but you can definitely use honey, maple syrup, dates or regular sugar. Yogurt can be substituted with a non-dairy milk (just add enough to get a sticky consistency with the batter). Cinnamon is optional, we just like spice over here. And you can add almost any kind of mix-in to taste. Almond butter, peanut butter (with a little jelly thumbprint before baking, yum!), chocolate chips, blueberries, skys the limit!
