This week is already off to a better start because my person is home this week. Last week felt like a bit of a dumpster fire. Josh was gone all week on a work trip that crisscrossed the entire US and it took me approximately 2 minutes to develop cabin fever. I tried to stay busy but then I’d remember how hard it is to get out and actually do things done with a 1-year-old.
Anyway, Josh got home Saturday night and we crammed as much as we could into the rest of the weekend. His job is so fast paced that I always try to make an effort to keep our home and family time as restful as possible. We went to church, took naps and then grabbed coffees before going to the pool so Mr. Hugo could get some wiggles out. On Sunday nights we watch “Food Network Star” and I’m loving this show so much! Josh loves it because I make snacks and will actually stay awake to watch the whole thing. Please tell me I’m not the only person who falls asleep in EVERY movie and show!!
This is our second official week of MEAL PREP. Last week I ended up with an accidental double order from Hello Fresh meal delivery (tried to cancel, accidentally ordered 2 boxes, still not sure what happened…) so there was no need to prep anything. I’m loving this week’s menu much more than our first week! I made this Teriyaki Chicken with rice and roasted veggies and one of our all-time favorites One Pan Mexican Quinoa. Now if I can just locate the 75% of my meal prep containers that went missing in that first week, we’ll be set!
I hit it hard this morning with a cycle class at my gym. My goodness, I hate cycle so much! I love weightlifting and could do barbell classes all day, but the cardio and those seats kill me 5 minutes in! I’ve kinda gotten into a routine with my barbell and ballet class 3-5 mornings a week, but we had a few errands to run this morning so I picked the next class set and ended up with a 50 minute cycle class. Looking forward to not walking tomorrow.
Hugo is signed up for his first swim class this week! I can’t wait to see him doggie-paddling in the water, I know I’m going to melt of the cuteness. He’s young, but my parents put all of us in swimming lessons every summer growing up and Josh is from Florida so spending time in the water is second nature to him, we want Hugo to be very comfortable around the pool and beach. I’m excited to see if he catches on this early.
