I LOVE LOVE LOVE baking with pumpkin! And fresh cranberries but that’s another post for another day. Back to pumpkin. It’s one of those ingredients similar to banana that gives your finished product a wonderful texture and light flavor. Especially for gluten-free or health-ish baking, you’ll find that it plays nicely with gluten-free flours and doesn’t require extra sugar.
I have several pumpkin recipes bookmarked right now (or the modern equivalent: pinned on Pinterest) but this is the one I baked up the other night. Oh my gracious! I packaged up half the batch immediately and gifted it to a friend, turns out I didn’t give enough away because between Josh, Hugo & I the whole loaf was gone in a day.
My paper loaf pans are sold out – these are similar. I always stock up on fun baking supplies, pretty paper napkins and plates at Home Goods and TJ Maxx, they have the best things! I like keep a stash so that its easy to wrap up goodies for friends.
Elisabeth & Butter is one of my favorite newer blogs, I love her sweet style (she lives near our favorite beach!) and her recipes are delicious and gorgeous. This Pumpkin Chocolate Chip Bread recipe came out perfectly. It made enough batter for one large loaf pan (I love this pretty pumpkin one!) and two small paper loaf pans. I used King Arthur Gluten Free Flour since I ran out of my favorite Cup 4 Cup and have been having a hard time finding it around town, but the KA is a great substitute! I ended up swapping out the chips for a milk chocolate and I really wish I’d stayed with a dark chocolate the milk was just a bit too sweet (Elisabeth knows what’s up, do what she says folks!) But that’s all the notes I have for this one, do yourself a favor and bake this one!
