This is embarrassing and I’m not even going to pretend that this salad is healthy, but this has become my go-to lunch/dinner. I discovered it on an Instagram account that I love to follow @cattlebaronincashmere, not only does she have the BEST taste in memes, but she also will sometimes post these goofy little “recipes”, well, her Chicken Tender Salad has been a huge winner for me the last few months.
With the film hours, constantly changing schedules and a lot of meals on my own this is what I’ve been making for lunch or dinner several times a week.
Here’s the not-recipe:
-Chicken Tenders (or you can pick up tenders from your favorite fast food drive-thru)
-Shredded Cheddar Cheese
-Classic Salad Mix, straight out of the bag!
-Bleu Cheese Dressing (or Honey Mustard or whatever you like! I love the thick & chunky bleu)
Toss the salad with dressing and cheese. Chop tenders in to bite sized chunks and place on top of the salad. Voila!
You can use Chickfila tenders or nuggets, but I try to stay gluten free when I’m at home, so I recently found these organic, gluten free chicken tenders from Purdue and always keep them in my freezer. They are delicious and so easy for a quick meal!
