This is quite torturous for me at the moment, Josh & I have embarked on a low-carb diet and I’m miserable. I’ve developed a much more balanced approach to eating and health over the past few years and my goals have been to have more balance and joy with food, that being said, sometimes you just need a reset or a kick in the sweatpants. So we’re working on eating very clean over the next few weeks, four days in and we already feel lighter and have tons of clarity. You know, the same line that everyone on a diet gives you, yes, we feel good and smug, but I say I’d still rather have a cinnamon roll…
Anyways, I did a little baking over the last month and I’m looking forward to trying some new recipes with the holidays in mind.

APPLE SPICE CAKES WITH MAPLE CREAM CHEESE FROSTING
I baked these up at my parents house. I walked in the door, straight off the airplane and my mom was like “welcome home sissy, can you make a dessert for our dinner tonight”. For me, that is probably the best welcome I could ever get, it’s good to know that some things are always the same.
Hugo and I made these a few weeks ago and these were so easy that I actually let him help me. They’re healthy-ish enough for a toddler to snack on and mom & dad to sneak with their morning coffee (please tell me I’m not the only one who does this!). Another recipe from Elisabeth & Butter Blog, but she has been my go-to for a while.
I always forget about snickerdoodle cookies until I remember and then I wonder why I don’t make them all the time! Friends of ours (basically our little brothers) love them too and they work out of Josh’s office so I snagged a few and boxed up the rest for them and their super-tall, super-fast early 20-something metabolisms to enjoy. This recipe is amazing!! I especially love the warm cardamom and the way that the cookie stays soft even to the next day.

MAPLE CRANBERRY DARK CHOCOLATE SCONES – I’ll never not love a good scone. And what is prettier than fresh cranberries? Nothing, I tell you.
