Today is the first Monday in a long time where I’ve felt as if I’m ready to go again. We had a really great weekend, with the holidays and travel and sickness, Josh & I woke up on Saturday and decided we were canceling everything and staying home to rest. It was glorious! For about two hours, then we started to get alerts that there were tornados in the area, so the boys settled in with a movie (and second screen playing the weather channel) as I deep cleaned and Kon-Mari’d the kitchen. We took it slow the rest of the time, enjoyed being back at our church, I did some cooking, Josh and I both planned out our week.
So yes, feeling about 97% more refreshed and ready to roll.
It’s taken me these first two weeks of the year to do my planning and goal setting and to just plain wrap my brain around what I “think” these next twelve months will look like. I ordered this planner from Simplified and Emily Ley and I love it (PSA: my planner and others are currently on sale with promo NEWYEAR). The daily format works well for me since my day-to-day life changes quite a bit. After the sadness of Christmas wears off and the anxiety of a new year hits, I feel like I need a minute to let everything sink in before I make my plans. I already made some good progress on getting my thoughts organized and put into tasks.
And speaking of Christmas, we finally got everything packed back into boxes and put away. Okay, so theres still a Christmas Tree on my front patio (what does one do with an 8ft dried up pine tree???), but other than that, the house is so clean. I usually hate how bare everything looks after the holidays, but this year I was ready for a fresh feel. I need to buy some houseplants to fill my pots and vases, does anyone have a recommendation for something that’s pretty, doesn’t need sunlight, and is low-maintenance?
I also thought I’d share my menu plan for the week with y’all. This is something that I do EVERY. SINGLE. WEEK and since I love to get ideas and see what others are making too, here’s what we’re eating.
Menu Plan for Week of January 13th
Monday: Pancakes, Bacon and Eggs. This is a super easy dinner for me on busy days, I just use a gluten free mix for the pancakes and pop the bacon in the oven for easy clean up!
Tuesday: Cheesy Cauliflower Rice (we’re not on a Keto diet, but I have a Costco bag of cauliflower rice in the freezer and wanted to try a new recipe) & Lettuce Wrapped Burgers
Wednesday: BBQ Chicken Stuffed Sweet Potatoes (just shredded chicken mixed with a bottled bbq sauce, I’ll roast and then split the sweet potatoes and stuff with the chicken and top with a little shredded cheese) I like to serve this with Coleslaw on top or on the side.
Thursday: Josh & I have an at-home date night planned, I’m making beef al pastor tacos (I’ll use a variation of this recipe, but with a beef roast and slow cook it all day) guacamole, tortilla chips, fresh ginger sodas (I accidentally ordered too much ginger with my Walmart grocery order last week, so I’m excited to try this recipe!) and probably just ice cream for dessert (since it’s simple and our favorite).
