Our weekend was a typical, all-American, suburban homeowners kind of weekend. Josh cleaned out our garage, I cleaned our patio cushion covers and prepped my laundry room for a little paint/fixtures update, Hugo splashed in his kiddie pool and we ate a few meals outside. I’ll admit, it was pretty boring, but I didn’t hate it. There are few things that I love as much as our “slow Saturdays” together. They are such a gift.
Josh has been hard at work on a new project (I’m not sure if I’m allowed to disclose yet, but if you follow us on instagram you may pick up a few hints… @producerjoshw @abbe.walsh) this means that travel has picked back up and he’s on set most days. Hugo and I never turn down an opportunity to stop by and visit after filming is done, it looks a lot different these days with a small crew, masks and limitations on the number of people in a room. But feels nice and normal to chat with our friends and to see a film set humming along. The movie industry has been hit pretty hard, it’s such a gift to be working and to know that new content is being created.
Have you cooked anything new lately? I feel like I’ve reached the point of summer where I just want to put out a bowl of watermelon and tell my guys to fend for themselves. It’s hot out and I just want to eat fresh produce and cheese boards and maybe a smoothie. Anyway, here’s my menu for the week, hopefully this gives you a few good ideas.
Menu:
Monday: OUT!
It’s a set day for Josh so I’m planning to pop over and join for dinner before we run to a meeting tonight (or we’ll just grab something to go if they’re behind schedule)
Tuesday: Veggie Tacos
This recipe looks so good! I haven’t decided which combination of veggies I want to include yet, but this looks like a good taco!
Wednesday: Nigella’s Yellow Squash & Happiness Soup
I found this recipe in an old cookbook (Nigella Forever Summer) a few weeks back and can’t stop thinking about it, please do yourself a favor and watch her wonderful youtube. Oh my goodness, I just love her so much. And isn’t the word “courgette” so much better than “squash”??)
Thursday: Pineapple Chicken Bowl with Cauliflower rice
This recipe here. You can use regular rice, but we actually love cauliflower so I substitute it as often as I can.
Friday: Sourdough Pizza
We’re still going strong on our Friday night pizzas. I owe y’all a post with my recipes and tips for sourdough crust. But here is the sourdough crust recipe that I use most often.
I'd love to hear from you, leave a comment below!
