We’re hosting a few of our friends for St Patrick’s day next week snd I’m excited to share a few of favorite ideas for making the day special as well as my dinner menu and recipe links.
Josh and I are both of Irish heritage (we’ve lost track of just HOW Irish our son is) and grew up celebrating big time on St Patrick’s Day. My mom is all into it, down to dying the butter green! Her corned beef and cabbage is possibly the best meal of the year (she’s a great cook so this is saying a lot) and something that our friends and family all look forward to. I’ll be keeping our meal pretty traditional this year but substituting a few things to keep it gluten free and dairy free so that Josh can enjoy everything too. (I’ve made a note of my modifications below.)
Hugo and I will probably do a little decorating next week. I think we’ll paint some paper shamrocks and make them into a banner to over the fireplace. I also love to make Rice Krispy treats with Lucky Charms cereal, oh my gracious! they are so delicious. It’s a rare day that I have sugar cereal in our house and already this morning Hugo was on it, I found him later in the day hiding in the guest bathroom eating the rainbow marshmallow by the handful. Yeah… Anyway, if the it’s a very kid friendly treat thats fun to make together and I’ll package them in cello bags with green ribbon as a party favor for our guests.
“End of the rainbow” charcuterie board | I love these ideas here. I’ll include extra fruits & vegetables and this non-dairy sauce for dipping
Gluten free Irish soda bread | This recipe with a combination of lemon juice and almond milk to substitute the buttermilk. And King Arthur Gluten Free Flour mix of course.

Colcannon and Roasted Carrots | I’m going to try this recipe with non-dairy sour cream instead of the milk
Irish Cream Bread Pudding | I’m eyeing this recipe and if I do, I will use pre-made gluten free bread, vanilla almond milk and an Irish Cream flavored non-dairy creamer (I’ve had good success with this before). If I can’t get the caramel recipe to work, I might just do a scoop of non-dairy ice cream and call it a day
