It seems as if I have resurrected the my old blog here. I mean, five posts in one week. Who even am I? I did mention that one of my goals for the year was to write more… It’s been good to stretch this side of my brain and I have had a lot of fun coming up with ideas for posts, so here we are.
Last week was such a good week, Josh was working from home and aside from a few Zoom call mishaps, we both had a ridiculously productive week. It was nice to have a little bit of Hugo backup and the ability to bounce ideas off of each other throughout the day. The downside was the nonstop water drinking, each time with a new cup and the snack supply has no been completely decimated. I will miss him this week as we’re back to regularly scheduled programming.
How we’re eating this week: Pretty darn clean! Josh does the Core Restore liver detox every year, it is a low-allergen diet and supplements that he feels so great on. He is in the middle of the program now and we all eat the dinner so that keeps things simple (with the occasional snack board or Annie’s mac & cheese for Hugo.) No gluten, dairy, soy, or egg in this week’s menu.

Monday | Spaghetti Squash Spaghetti | GF/DF
This recipe is brilliant! I first saw @elanandnelson making this the other day and was inspired. You simply pop the squash into the crockpot and it all cooks together. (To keep mine dairy free, hold the burrata, I used unsweetened almond milk instead of whole milk and sprinkled a little vegan parmesan on top.) Serve with a fresh arugula salad. Tuesday | Black Bean Soup with Guacamole & Tortilla Chips | GF/DF
I like to put out extra toppings like salsa, guacamole, lime and cilantro. This is a super easy dinner that comes together in under 30 minutes. If I’m running late, I’ll grab pre-made gauc at the store. Siete are our favorite tortilla chips at the moment! Black Bean Soup Recipe Here
Wednesday | Shepherds Pie with Sweet Potato Topping | GF/DF
Josh loves shepherds pie, so I’m making one that he can eat. In all honesty I have not made this exact recipe, since I tend to make up my own as I go, but this is about as close to mine as I can find. The Real Food Dietitians Shepherds Pie Recipe Here
Thursday | Ginger Turmeric Chicken Soup | GF/DF
This is one of my very favorite recipes. It is so fresh and comforting. We love this after we get home from a trip or if someone hasn’t been feeling well. I’m making homemade bone broth this week and will use it for this soup. I serve it with some Mary’s Gone Crackers on the side. Fed and Fit Chicken Soup with Ginger & Turmeric Recipe Here.
Friday | Pizza Night
All clean eating goes out the window for pizza night! I’ll take Hugo out for a little date and we’ll grab our favorite treat.
