One of my most popular pins on Pinterest is my Simple Granola Recipe. I, and many of you, have made it countless times, but a few years ago I was introduced to the Eleven Madison Park granola and there was no turning back. It is a cherry pistachio granola that is so good that you will stand over the counter or eat it out of the bag just shoving it into your mouth. The crunchy sweet oats and pistachios, chewy dried cherries and a delicious hint of salt, this granola recipe is amazing!
With a few tweaks, I’ve made it my own and it’s become a bit of a hyperfixation meal for me. It is, of course, perfect in a bowl with milk, over greek yogurt or just eaten by itself. This is truly a luxurious granola recipe. I make it weekly and often end up making little goodie bags to hand out to friends. I even included this cherry pistachio granola in my Mother’s Day gift boxes this year!
And as it turns out, I have a rather annoying list of foods that I’m avoiding per doctors orders, things like peanuts, almonds, chia and quinoa. Most granola, pre-made or homemade include these items, so this one includes all of my happy foods.
The origins of this granola recipes is a great story! The NYC restaurant Eleven Madison Park would send guests home with a jar of granola for breakfast the next morning. The book Unreasonable Hospitality goes more into it and the restaurant with outstanding hospitality. I’m several chapters in, but have really enjoyed reading this book.
Cherry Pistachio Granola
Ingredients
- 3 1/2 cups of Gluten Free Rolled Oats
- 1 cup Shelled Pistachios
- 1 1/5 cups of Coconut Flakes (NOT shredded!)
- 1/2 teaspoon Cinnamon
- 1/4 teaspoon Cardamom
- 1 tablespoon Kosher Salt (NOT table salt)
- 1/3 cup Extra Virgin Olive Oil
- 1/3 cup Brown Sugar
- 1/3 cup Maple Syrup
- 1 teaspoon Vanilla Extract
- 1 cup Dried Tart Cherries
Directions
- Preheat oven to 300 and line a rimmed baking sheet with parchment paper.
- In a large bowl, mix together oats, pistachios, coconut flakes, cinnamon, cardamom and salt.
- In a saucepan, add olive oil, brown sugar and maple syrup. Melt together over medium heat until sugar is dissolved. Add vanilla extract. Mixture will bubble up, just stir until it calms down.
- Pour syrup mixture over oats and toss until evenly coated.
- Spread oat mixture onto parchment lined baking sheet.
- Bake for about 40 minutes, checking every 10 minutes until your granola is perfectly toasted and dry,
- Remove granola from oven, mix in dried cherries.
- Cool and enjoy!
