My gluten free fruit pizza cookies are perfect for the 4th of July! I’ve taken my Gluten Free Frosted Sugar Cookie recipe and updated them with a patriotic flair. While I was growing up, one of my favorite treats at a summer potluck was the fruit pizza. You know the one, crumbly sweet crust, creamy and tangy cream cheese layer and then lots of delicious fruit carefully arranged on top.
I was in wanting a gluten free fruit pizza and then I realized that my sugar cookie recipe was the perfect base. I have not tried baking it into one large cookie and going that route, but if anyone tries it, please let me know!

Gluten Free Fruit Pizza Cookies: how to make them…
I simply mixed up a batch of my Sugar Cookie dough, cut it into circles and baked. A simple cream cheese frosting (try my white chocolate cream cheese frosting recipe!) to top the cookies and then an assortment of red, white and blue fruits.
This would also be fun a fun activity for kids, just set out different berries and fruit and let them decorate the the frosted cookies.
I hope your 4th of July is off to a good start. We have plans for a pizza party tonight, then lots of pool time tomorrow followed by grilling hot dogs and brats and then the big fireworks show after dark. The kids in our neighborhood will be having a parade with all of their bikes and scooters and it’s just the cutest thing!
